· 1 Pack of Alkaramah Kunafa thin shredded dough
· 1⁄2 lb butter, melted
· 2 1⁄2 tablespoon granulated sugar
· 1cup water
· 1⁄2teaspoon rose water or 1⁄2 teaspoon vanilla exlract
· 2 teaspoons ground cinnamon
· 500 grams of sweetened Akawai cheese or Mashmula cheese
· 2-3 table spoon of cow butter ghee


1. in a heavy bottomed saucepan over medium-high heat, add water, the 2 1/2cups sugar. Stir to combine. Bring to a boil. Let simmer to a syrupy consistency. Remove from heat, let cool and add rosewater or vanilla.
2. Preheat oven to 350 degrees F/180 degrees Celsius Butter a 12-inch round, 2-inch high cake pan.
3. In a large bowl gently loosen Alkaramah Kunafa. Mix very well with the 1/2 pound of melted butter
4. Spread the butter ghee into 25cm round aluminum tray and press very well
5. Bake in oven until turned kunafa is turned lightly golden brown
6. Take out from oven to add cheese
7. If using the sweetened Akawi cheese, spread in an even layer over Kunafa,
8. Return back to oven for few minutes just for the cheese to melt and spread evenly and take out immediately (don’t over bake)
9. Carefully Flip into another tray keep Kunafa uniformly intact
10. Immediately pour cold sugar syrup evenly over the hot kunafa
